Love this knife!!!!!!My old go to knife was a mid priced 8" German chef's knife, and after 20+ years of use and being through the dishwasher it was not holding its edge like it used to. I had trouble deciding on another German knife or a Japanese one. I found this knife and thought it was exactly what I wanted. Once it arrived, and got in my hand I was more than impressed. Great balance and light weight and sharp beyond belief. I feel this may be the best do it all knife, as I feel with its this blade profile that this will work super well for slicing too so it is like 2 great knifes in one.
