We love the long lasting, razor edge on these knives, thanks to Shun's use of their unique VG-MAX steel in the core of the blade. The Damascus cladding on the blade is hammered to add style and to help food release from the blade when cutting. We also love that 16 degree, double beveled edge of these knives has an undulating line where the core and cladding meet that is similar to the look of ancient samurai swords. As with all of Shun's knives, these are well balanced and have a full-tang handle for precision cutting.
